My favorite pasta–made on the fire.
This is one of my favorite recipes–and here’s how I made it over a campfire!
Get a fire going until there are some hot coals–you’ll want to begin your fire about an hour before you want to start cooking. Then make sure you’re able to create a stable, even spot to set your cast iron dutch oven–so that nothing spills out or cooks unevenly.
Dice one onion, a few heads of garlic (I love garlic so I use a lot) and throw that all in your pot with a stick of butter and a little olive oil. Sauté that until the garlic / onions are soft.
Add in one large can of diced tomatoes and put the top on so that the tomatoes cook down–I think I let them cook for about 20 minutes.
Then you’re going to throw in your seafood–1/4 lb shrimp, 1/4 lb scallops, 1/2 lb clams. That’s also when I put in about 1 cup of dry white wine.
Stir it all together, put the top on and prep the table–with parm, a little mascaprone cheese (if you’re feeling that), salt + pepper, red pepper flakes.
Then you’re going to throw in your pastas–I used fresh bucatini but you can use hard pasta–
